Sure we’d expect your eyes to be on the giant piece of sirloin (like this one hooked up at Charango) in any normal situation,
but not when there’s a miniature Hattori Hanzo sword skewering it like a fucking kebab. The right way to go about using blades.

Jesus, just look at that knife. It looks like it was forged in the hell fires of Japan’s underworld.
Thing is, it kind of was.The Shun Premier utility knife from Kai is folded 32 times from Damascus steel and meticulously

Margot Janse & Richard Lewis - MD NeoGroup, handing over her new KAI Composites Chefs knives at NeoGroup HQ, Cape Town 29 April 2016

The innovative Seki Magoroku Composite Series consists of 8 blade shapes with double-sided polished blades. The beautifully finished blade is made from the combination of two different steels, which creates a fascinating contrast between the mirror-polished blade and the satin opposite side. The mirror-polished core of the blade is made from VG MAX Steel with a hardness of 61±1 HRC and the satined outer material from SUS420J2 steel: a combination that guarantees a high corrosion resistance and the long-lasting performance of these blades.

The production process of the Composite blades is based on a new technology in the aircraft construction sector and guarantees high resistance and extreme precision. The two steel grades are jointed through a particular copper brazing procedure. The subtle copper line remaining between the steel grades adds an additional special touch.

The slim tapering handle is made of light Pakka wood. Its form and its diagonal grain pattern impart these masterpieces a particularly light dynamic.

Peter Goffe-Wood & His Signature Michel Bras Cleaver

Kitchen Cowboy & Master Chef Judge Peter Goffe-Wood shows off his new Michel-Bras No10 Meat Cleaver
his signature knife at the Good Food & Wine Show Cape Town 21 May 2015 with NeoGroup SA MD Richard Lewis.

For heavy cutting, pounding and separating

This tool is a combination kitchen knife and cleaver, making possible any and all cutting. The one-third of the blade nearest the handle is the widest, while the remaining two-thirds of the blade extending outward is honed to that of a kitchen knife.

Strong and flexible three-layered titanium coated blade

The Michel BRAS blade is produced in three layers: a hard stainless steel sandwiched between two layers of a more flexible stainless steel. This makes for better resistance and durability. Furthermore, a titanium coating has been added to enhance its anti-oxidation properties. The matt satin finish makes for a beautiful and sober appearance.

Kai Original Made in Japan

Kai SHUN Originals - Made in Japan

We are often asked this question by our loyal & would-be fans at shows so decided to write this article to keep you informed.

There is ongoing activity in South Africa & around the World by importers of Chinese copies of Kai Shun Damascus knives at discounted prices. These so-called “phantom brands” are registered in Japan & made in China , the country responsible for 70% of the World’s counterfeit goods.

The key thing to look out for on the knife blade is , HANDCRAFTED IN JAPAN if it doesn’t say this then it is probably NOT Made in JAPAN.

Apart from their origin, although the appearance of the COPY CATS may be similar to Shun Original Damascus knives, there are significant differences in both quality and performance *

Whatever chef knife brand you may choose to fit your budget, we would advise you to know what your are getting . Rather invest in a single great quality chefs knife, than be hoodwinked into buying a set of COPY CAT knives trading of the performance & goods looks of others.
